The White Truffle is one of the most characteristic products of the Piedmontese area of the Langhe, Roero and Monferrato. It is a fruiting body of fungi belonging to the Tuber genus that develops underground. It has an irregular shape, often flattened. To date there are no truffle cultivation techniques, so we are talking about a spontaneous mushroom that is harvested in the autumn period until the beginning of winter. The harvesting season of the prized Alba White Truffle begins on 21 September. Truffle harvesting consists of an exciting teamwork between dog and truffle hunter: the dog identifies the tuber-shaped mushroom thanks to the well-developed nose while the hunter is preparing to extract it from the ground. Every year the Alba White Truffle is celebrated through the International Alba White Truffle Fair
