Brodetto


Brodetto is a poor fish-based dish typical of the Marche region, characterized by an explosive charge of aromas, shades and colors. In a little bit the whole region is the protagonist of the table, but each city prepares it following its own recipe which can vary according to tradition.

The most famous is perhaps that of Fano where it is honored every year with a great party, the BrodettoFest. Brodetto is a dish born on board fishing boats. To make it, the fishermen used fish that were not suitable for sale due to their size or because they were damaged by nets. Without being filleted they were cooked in a pan with oil, onion, tomato paste and vinegar. Everything was accompanied with stale bread.

In Porto San Giorgio it is possible to taste the famous Brodetto De.Co., prepared following the local recipe in which the use of frozen fish is prohibited. The fish used must strictly come from the central Adriatic and there is an obligation to use strictly local products and ingredients, from bread to oil.
