Ciambella di Sant'Agata


In Sant'Agata Bolognese, a few decades ago, there was a small shop with an adjoining bakery, where you could buy, in addition to bread, the Ciambella di Sant'Agata.

It was a simple homemade donut, which became famous thanks to the mention in a recipe book of cakes, donuts and panettone from the "Recipes of Petronilla" series.

Published in 1957, it read about the ''Ciambella di Sant'Agata'' and the existing oven in the municipality of the same name. The recipe was the same as that used to be prepared in local homes for some time: the cake was simply called ''la brazadèla teandra'', the soft donut, to distinguish it from the ''brazadèla dura'', the hard donut, prepared with the same ingredients, but with different proportions and processing.

Few people today know it as Ciambella di Sant'Agata; it is usually called "donut of 3-3-3-1-1", to designate the quantities necessary for the preparation.

It is usually possible to taste the Ciambella di Sant'Agata in its local version on the occasion of the patronal feast of the town, the Festa di Sant'Agata, held on 5 February.
