Every year, thousands of enthusiasts of traditional flavors are ready to reach Canino, a charming town in the province of Viterbo, which opens its doors for the Green Asparagus Festival between March and April.

A typical product of the peasant tradition, not easy to find because it prefers steep slopes and loves to hide among weeds, in this part of Upper Lazio, it is known as the "eat-all": none of its parts are discarded, and each, expertly paired, can give dishes a unique and distinct flavor; in the Viterbo area of Tuscia, asparagus matures already in January, in large quantities and of excellent quality.
