EVO, the gourmet restaurant of AQUALUX Hotel SPA Suite & Terme Bardolino also open to those who do not stay in the hotel, offers a taste experience between tradition and creativity in a refined and welcoming setting.

An experience, the one proposed by EVO, also appreciated by Gambero Rosso, which for 2020 has included the restaurant among the 2685 selected addresses as well as for the cuisine, for the service, for the cellar and for the environment.

The attribution of the coveted fork represents a fair recognition also for the seriousness and commitment of Simone Gottardello who firmly holds the helm of the kitchen. This young chef, in addition to having convinced the members of the technical jury of the Maculan Award 2019 with his composition of red shrimp, suckling pig and citrus fruits combined with the passito I Capitelli 2015 from the Anselmi Winery, has joined Euro-Toques, the prestigious an association that counts among its members some of the most renowned chefs and which aims to guarantee good and healthy food.

EVO also for next season confirms its strong propensity to respect tradition and is characterized by the excellent quality of the raw materials used according to seasonal cycles, personally selected by the chef.

The gems of the territory, that is the products that only the wealth of this area can offer, continue to be protagonists: such as vialone nano rice, the black truffle of Monte Baldo, snails - or snails -, vegetables such as red radicchio, white asparagus and celery from Verona, mainly organic and from selected producers in the area.

The autumn menu tickles even the most suspicious palates with proposals that do not deny the prerogatives of EVO: such as the soft mousse of potatoes with Garda DOP oil, smoked lake fish, lake fish eggs and Kaffir lime, or the Tartare di Garronese veneta al knife, smoked almond, blueberries, porcini mushroom ice cream, passing through the great classic represented by Vialone nano Veronese rice creamed with Corrado Benedetti 48 months reserve, fresh and dried porcini mushrooms, black garlic.

The dishes are also enhanced by the combination with wines made from native grapes - Soave, Valpolicella, Amarone, Bardolino - and with the precious Purple EVO Oil.
The extremely original presentations are the result of the almost maniacal care that distinguishes the chef for detail and little things, satisfying the sight of the guests preparing them for a curious and lively tasting.

And speaking of tastings, those suggested by Simone intrigue and entertain, leaving room for imagination. Like Baccalà that triumphs creamed Venetian style, with onion in saor, olives and beluga lentils, or cooked in Viola olive oil, with Vicenza-style cod sauce, black garlic from Voghera and passion fruit. And Mare is also a triumph with Spaghettone Monograno Felicetti, "busara" of Adriatic scampi, chopped marinated scampi, seaweed and citrus fruits, and Red mullet, mullet soup, clams, cockles, smoked aubergine.
But the surprises are not over: every Thursday by booking two tasting menus, one will be at full price and the other will be discounted at 50% (excluding drinks). On Saturday, however, dinner will be accompanied by very pleasant acoustic music.

For all the most loyal customers there is a sort of loyalty reward that will give the opportunity to obtain dinner after dinner, bottles of precious Viola Oil (L'O, Bio and Garda oil), to enjoy relaxing massages at the 'AquaSPA & Wellness and finally even a dinner for two at EVO.

And for those wishing to experience an experience that is not only exclusive but unique and tailor made, it is possible to organize a dinner at the cellar (for a minimum of 2 people up to a maximum of 6) with a welcome flute, tasting menu and dedicated service. On request it will be possible to add live musical entertainment, customized floral arrangements and decorations, and much more ...

It is worth emphasizing the strict observance of the anti Covid 19 rules such as temperature measurement, recording of telephone contact for 14 days for tracking in the event of a positive outcome of one of the guests, the mandatory use of a mask (except at the table).
