The Sagra delle Pallette ai Funghi (Matuffi) takes place in Uliveto Terme di Vicopisano, in the province of Pisa, in the Tuscany region, traditionally in the month of July.
Pallette, a typical dish of Central Italy, are made with cornmeal polenta, cooked for at least forty minutes until the polenta reaches the consistency of semolina. They are served hot in a deep dish, accompanied by a mushroom sauce or alternatively by a meat ragù.
Pallette alla Pisana always come with a sauce of sautéed mushrooms and sausage, or alternatively with leeks or with eggplant, tomato, and carrots.
Matuffi are a specialty particularly typical of the province of Lucca, a very rich first course that is based on alternating layers of soft polenta with meat sauces or mushrooms.
