But what exactly is "fregnaccia"?
It's a batter made with water, flour, herbs, and eggs, which, once fried, is served with cheese. In peasant tradition, it was a dish eaten during harvest times, when time for cooking was scarce. Therefore, this dish was prepared because it's simple yet very nourishing. Some historians even claim that this dish dates back to the time of Christ, and the recipe has been passed down through the ages to this day.
