The Bisele Festival celebrates the rediscovery of the typical dishes of the past at the beginning of the Tonezzano winter. Bisele is the ancient name of the "small vegetable garden" at home, and in the Vicenza area of Tonezza del Cimone it has become a typical De.Co. dish, based on Patona De.Co. and other ingredients.
Patona is a polenta made from potatoes and flour, seasoned with sautéed onion and pork cracklings, to which, in Bisele, cotechino, sauerkraut, sopressa and mountain cheeses are added.
