The Sagra dei Santi Pietro e Paolo in Vigarano Pieve is the only gastronomic festival dedicated to the Ferrarese cappelletto, the delicious stuffed pasta that has always been present on the tables of the people of Ferrara since the time of the Este family.
Cappelletti are a stuffed egg pasta so called because of the characteristic shape that resembles a hat.
They are made by cutting the pasta sheet into squares, in the center of which the filling is placed.
The dough is then folded in two in a triangle shape, then joining two ends by overlapping them.
An early reference to this culinary preparation can be found linked to Ferrara, in a text dating back to 1556 by Messisbugo, a former Este court cook with Alfonso I d'Este in the early 16th century.
