Red Wheat was being grown in Italy in the early part of the nineteenth century and was for thirty years the most widely grown wheat throughout the peninsula. Production was interrupted around 1925 with the "Battle of Wheat" a campaign launched during the Fascist regime by Benito Mussolini in order to pursue Italy's self-sufficiency in wheat production. The campaign was successful in achieving an increase in domestic wheat production and a consequent decrease in the trade deficit, but it came at the expense of other crops, a historical event that led to the abandonment of its production in favor of more productive crops.
A phenomenon that also affected the countryside of the Municipality of Salmour albeit with a slight delay since the territorial conformation of the Municipality made the cultivation of this soft red wheat particularly suitable, which arose naturally without the need for pesticide fertilizers or other substances except rainwater.
Currently, Salmour Organic Red Wheat is produced by the Galleano Renato farm on agricultural land located in the municipality of Salmour and has obtained the Salmour Municipal Denomination (De.Co). Red Wheat is also produced by the Morano Farm.
