Guarda Ferrarese celebrates with the Festa Dla Salama da Tai, three weekends to taste typical products and traditional local dishes, especially the pork sausage that gives the festival its name, a relative of the more famous salama da sugo.
Every evening from Friday to Sunday the festival restaurant, specially set up, will be open to the public, where you can taste not only the salama protagonist of the event but also traditional Ferrara dishes such as cappelletti, in broth, with cream or pasticciati, salamina da sugo with mashed potatoes cappellacci, or caplàz, with pumpkin filling, garganelli with cotechino sauce, grilled salami, rib and pork tenderloin. Finish with typical desserts such as chocolate salami, tenerina and zuppa inglese, all accompanied by local wines.
Salama da Tai is a sausage made from the lean parts, lard and fat of adult pork, mixed with sea salt, Indian pepper and fresh crushed garlic soaked in white wine. The mixture, after soaking one day in vinegar, is left to mature for at least six months in a completely natural way, thanks to the humid climate of the area. It is cosumed thinly sliced with yellow-fleshed melon.
