In Vigarano Pieve, the only food festival dedicated to the Cappelletto Ferrarese takes place, celebrating the delicious stuffed pasta that has graced holiday tables since the time of the Este family.
Cappelletti are an egg-based pasta named for their distinctive shape, which resembles a hat. They are made by cutting the pasta dough into squares, placing the filling in the center, and then folding the dough into a triangle before overlapping the two ends. The first reference to this culinary preparation can be found in a 1556 text by Messisbugo, who was already a court chef under Alfonso I d'Este at the beginning of the 16th century.
