Grana Padano

Grana Padano is an Italian cheese with Protected Designation of Origin (PDO). Product certification PDO requires that all three key stages of the production (farming and milking cows, harvesting and processing of milk into cheese, and seasoning) must take place in the area of origin. The production area includes the municipalities of the provinces of Alessandria, Asti, Bergamo, Bologna to the right of the Rhine, Brescia, Como, Cremona, Italy, Ferrara, Forlì-Cesena, Lodi, Mantova to the left of the Po, Milan, Novara, Padova, Pavia, Piacenza, Ravenna, Rimini, Rovigo, Sondrio, Torino Province, autonomous Province of Trento, Treviso, Italy, Venice, Vercelli, Verona and Vicenza.

Its origins date back to the Middle Ages and today the Grana Padano is most produced PDO cheese in the world. In fact, the Grana Padano Dop is, along with the Parmesan cheese, the best known and appreciated among the cheeses to be grated, and has become a symbol of Italian gastronomy in the world.

To get a pound of cheese Grana Padano takes about 14 liters of milk. The aging period varies from a minimum of one year (young Grana) over two years (Grana Riserva).
